Indulge into Blue Berry Cheesecake!!



Ingredients

  • 250g plain sweet biscuits
  • 125g butter, melted
  • 3 teaspoons gelatin powder
  • 1/4 cup boiling water
  • 500 g packets cream cheese, softened
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla bean paste
  • 300ml thickened cream, whipped
  • 300g fresh or frozen blueberries
  • Icing sugar mixture, to serve

Method


Step 1

Grease a 6cm-deep, 20cm-round (base) spring form pan. Process biscuits until mixture resemble fine breadcrumbs. Add butter. Process until just combined. Press mixture over base and side of prepared pan. Refrigerate for 20 minutes or until firm.

Step 2

Sprinkle gelatin over boiling water in a heatproof jug. Whisk with a fork until gelatin is dissolved. Set aside to cool for 15 minutes.

Step 3

Using an electric mixer, beat cream cheese, sugar and vanilla until smooth. Gradually beat in gelatin mixture until combined. Fold in whipped cream, then 1 cup blueberries. Pour mixture into prepared pan. Smooth top with a spatula. Sprinkle remaining blueberries over cheesecake. Cover, refrigerate overnight (see notes, to freeze).

Step 4

Remove cheesecake from pan and transfer to a plate. Dust with icing sugar. Serve.

Notes:

To freeze: Cover cheesecake with plastic wrap, then foil. Freeze for up to 3 months. Serve cheesecake frozen or thaw in fridge overnight. Cheesecake can also be frozen in slices. Use a warm knife to cut cheesecake.

Decorating Cakes with Fondant Bows!!



Nothing says "celebrate" like a cake topped with a lush fondant bow. While the bow looks intricate, it's really just a grouping of fondant strips, folded, wrapped and arranged to create a full effect. When you cut strips with the Fondant Ribbon Cutter/ Embosser, you can create bows with stripes or beaded edge embossed designs.

Step 1: Cut Strips and Loop

This bow can be assembled directly on the cake or ahead of time, using a 2 to 2 1/2 in. fondant circle as a base. Cut strips for bow loops. Your bow may use more loops than shown here. Fold strips over to form loops. Brush ends lightly with damp brush. Align ends and pinch slightly to secure. Stand loops on side to dry.




Step 2: Arrange and Attach Loops

Position 6 or 7 bow loops in a circle to form base of the bow. Attach to fondant circle with thinned fondant adhesive or melted candy.






Step 3: Continue to Attach Loops

Attach remaining loops, filling in center area of bow. Trim loop ends, if needed, to fit.

Decorate it with Strawberries!

Turn your cake into a beautiful looking one! And that you can do with a simple cut and placing of fresh strawberries....
To decorate your cake, you would have to
1. Cut the strawberry vertically into thin slices.
2. Place the strawberries on the outer circle with pointed edges facing out.
3. Continue placing strawberries in a circle, reaching from the outermost to the innermost, one circle overlapping the other.
4. To keep the fruits fresh, brush a layer of preservatives on the fruits.

Now, you have a fresh looking cake, that is equally gorgeous and delicious.

Record Making

This is some cake!
Confectionery college school students celebrated as they made the world's longest roll cake in Japan on 17 April 2013. A team of 90 patissiers and students completed the 130.68m roll cake at the catering college in Tokyo. The army of cooks used 54kg flour, 43kg sugar and 2,682 eggs in their record-breaking bake-off. It was declared the world's longest roll cake by Guinness World Records.
The team beat the previous record of 115.09m which was also made in Japan in 2011.
The winning cake was decorated with 100kg of whipped cream, 10kg of sugar, 45g of gold powder and other ingredients.

Cake Decoration: Drop Strings

Today is our section of Cake Decoration Techniques:
Drop Strings on a Cake

The image you see in the post, has arcs at the outer edge on upper part. They are called drop strings.
To make Drop Strings:
Step 1:
With a toothpick, mark horizontal divisions on cake in the width you desire. Bag Position: shoulder level at 4:30 (7:30 for left hand decorating). Tip: lightly above the surface to attach. Touch tip to first mark and squeeze, pausing momentarily so that icing sticks to surface.

Step 2:
While squeezing, pull the bag toward you. Continue squeezing to allow the icing to drape naturally into an arc. Icing will drop by itself--do not move the tip down with the string. The end of the tip should be the same distance from the surface as the width from point to point on your cake.

Step 3:
Stop pressure before you touch tip to second mark to end string. Repeat, keeping drop strings uniform in length and width.

Step 4:
Try a different color for each row of multiple drop strings-put holiday colors together to really dress up your cake. To add multiple rows of strings, mark the cake for the deepest row and pipe that row.

Step 5:
Return to the first drop string point, squeeze the bag, and drop a string with a slightly shorter arc than in the first row.

Step 6:
Join the end of this string to the end of the corresponding string in the first row. Repeat the process for a third row of drop strings above the second.
