Basic Vanilla Cake!



This moist single-layer vanilla cake has a delicate texture and delectable crumb, but it's the old-fashioned browned-butter glaze that gives it a nutty flavor.

Ingredients
  • 1 1/2 cups sifted cake flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whole milk







Directions
  1. Heat the oven to 400 degrees F. Lightly coat an 8-inch cake pan with butter and dust with all-purpose flour. Sift the cake flour, baking powder, and salt into a large mixing bowl.
  2. Beat in the butter one heaping 1/4 teaspoonful at a time, using an electric mixer set on low speed, until the mixture resembles coarse sand. Beat in the sugar a tablespoon at a time, until the mixture resembles fine damp sand. Beat in the eggs one at a time. Add the vanilla and milk, and beat on medium-high, just until blended. Do not overbeat.
  3. Pour into the prepared pan and bake until a wooden skewer inserted in the center comes out clean — 30 to 35 minutes. Cool cake in the pan on a wire rack for 5 minutes.
  4. Un-mold and cool completely. Ice with Browned-Butter Glaze.

Fresh Raspberry Cake!



Jazz up plain cake with raspberry gelatin and frozen berries. Spread with a light, fruity whipped topping, the festive results make a cool and refreshing dessert..!

Servings: 12



Ingredients

  • 1 box (500 gms) White cake mix
  • 85 gms raspberry-flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) frozen whipped topping, thawed (3 cups)
  • Fresh raspberries, if desired
Method

  • Heat oven to 350°F (325°F for dark or nonstick pan).
  • Make and bake cake as directed on box for 13x9-inch pan. Cool completely in pan, about 1 hour.
  • Pierce cooled cake all over with fork. In small bowl, stir gelatin and boiling water until smooth; stir in cold water. Pour over cake. Run knife around sides of pan to loosen cake. Refrigerate 2 hours. Frost with whipped topping; garnish with raspberries. Store covered in refrigerator.

Yummy Chocochips Banana Cake!!



A banana twist to the traditional chocolate chips cake. A delicious banana cake with heavenly mixture of chocolate chips and a decadent chocolate icing! A hit among all the banana lovers...

Ingredients:


  • 200g plain flour
  • 125g caster sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 250g mashed bananas 
  • 1 egg
  • 115g unsalted butter, melted
  • 4 tablespoons milk 
  • 125g plain chocolate chips 
 
 
 
 
  
Method:
  1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm baking tin.
  2. In a large bowl, mix flour, sugar, baking powder and salt.
  3. In a separate bowl, combine bananas, egg, melted butter and milk.
  4. Stir banana mixture into flour mixture until blended. Be careful not to over mix.
  5. Stir in chocolate chips.
  6. Pour batter into prepared tin and bake in preheated oven for 30 to 35 minutes. The cake is done when a skewer inserted into centre of cake comes out clean. (It will have some melted chocolate, but no crumbs).
